Spinach and red pepper omelette

Ingredients
- 4 eggs
- 1 red pepper
- 200g spinach
- 50g pasteurised parmesan
- 2 tablespoons of olive oil
- 1 clove of garlic
- Salt
- Pepper
Preparation
Carefully wash the pepper and spinach. Finely dice the pepper.
In a frying pan, cook the spinach and the chopped garlic in 1 tablespoon of olive oil, stirring from time to time. Set aside.
Break the eggs into a large bowl and beat. Add the parmesan, the pieces of pepper and the spinach mixture. Mix and season with salt and pepper.
Heat the rest of the oil in a frying pan and pour in your mixture. Cook for a few minutes on a low heat. Make sure the omelette is nicely browned.
Serve immediately.
