“MALI” Yassa chicken

Ingredients
- 4 chicken breasts
- 4 onions
- The juice of 3 lemons
- 2 tablespoons of mustard
- 3 tablespoons of oil
- 1 clove of garlic
- 2 chicken stock cubes
- 2 tablespoons of black pepper
- 1 pinch of chilli
- Salt
Preparation
Slice the chicken breasts and place them in a dish. Coat the chicken breasts with a tablespoon of mustard, half the chopped garlic and the pepper. Mix together then leave to marinade in the fridge for 1 hour. In a large saucepan, brown the chicken in the oil. Add the finely chopped onions, the rest of the mustard, 2 cups of water, stock cubes, chilli, lemon juice and the rest of the garlic. Season with salt. Leave to simmer for 30 to 40 minutes until the chicken is well-cooked and almost all the sauce absorbed. Serve with rice.
