“LEBANON” Lebanese salad

Ingredients
- 150g radish
- 150g cherry tomatoes
- 3 onions
- 1/2 cucumber
- 1 green pepper
- 4 pita breads
- 2 tablespoons of chopped fresh flat-leaf parsley
- 2 tablespoons of fresh mint
- 30g rocket
- 1 clove of garlic
- 2 tablespoons of lemon juice
- 6 tablespoons of olive oil
- Salt
- Pepper
Preparation
For the salad mixture:
Carefully wash all the vegetables.
In a salad bowl, mix the radish and the sliced onions, rocket, cherry tomatoes, the peeled cucumber cut into rounds and the diced pepper.
For the vinaigrette:
In a bowl, mix the crushed garlic, lemon juice, olive oil, chopped parsley and mint. Season with salt and pepper.
Heat the 4 pita breads in the oven at 200°C until they are nicely brown. Cut them into small squares and add them to the salad.
Mix all together and serve.
